I recently came across an amazing chocolate chip cookie recipe and thought I would share it. This recipe is as close as you can get to the real deal. It’s made out of almond flour and is so soft and chewy, you will crave them, I guarantee! The only not so paleo ingredient in this recipe is the brown sugar in the chocolate chips. This recipe makes 12 cookies.
Prep time: 10 mins Cook time: 10-11 mins Total time: ~20 mins
Ingredients
• 1 c. almond meal
• ¼ t. salt
• ⅛ t. baking soda
• ¼ t. cinnamon (optional, but delicious!)
• 3 T. coconut oil
• 2 T. honey or maple syrup
• 1½ t. vanilla extract
• 1-3 t. water
• 2-4 T. Enjoy Life Semi-sweet Chocolate Chips
Instructions
- Preheat the oven to 350 degrees.
- Mix the almond meal, salt, baking soda, and cinnamon in a bowl.
- Stir in the coconut oil(melted), honey/maple syrup, and vanilla.
- Add in water, as needed to bring everything together. (I used 2 tablespoons and the batter became sticky but the cookies were really moist.)
- Stir in chocolate chips.
- Bake for 10-11 minutes on a well oiled or parchment paper-lined cookie sheet (the edges should be golden once completed).
- Let them sit on the pan for 5-10 minutes before serving (they firm up during this time, so this is an important step!).
